The Celsius to Fahrenheit Formula
Celsius and Fahrenheit are both linear temperature scales, so converting between them is a simple arithmetic operation. Use these formulas whenever a recipe lists a temperature in a scale your oven does not use:
°F = °C × 9/5 + 32
°C = (°F − 32) × 5/9
For example, a common moderate baking temperature of 180°C converts to 180 × 9/5 + 32 = 356°F, which most charts round to the familiar dial setting of 350°F.
Understanding the Gas Mark System
Gas mark is a temperature scale used on gas ovens in the United Kingdom, Ireland, and some Commonwealth countries. Each whole gas mark represents a step of roughly 14°C (25°F). Gas mark 1 corresponds to 140°C (275°F), and the numbers increase from there, with two fractional settings (¼ and ½) for very low temperatures.
- Low gas marks (¼–2) – Ideal for slow cooking, drying, meringues, and gentle braises.
- Medium gas marks (3–5) – The everyday range for cakes, roasts, and most baking.
- High gas marks (6–9) – Used for bread, pastry, pizza, and crisp, fast roasting.

Meringues & Drying
110–120°C / 225–250°F / Gas ¼–½
Very low heat to dry out without browning.
Slow Roasts & Casseroles
150–170°C / 300–325°F / Gas 2–3
Gentle, even heat for tender, slow-cooked dishes.
Cakes & Cookies
180–190°C / 350–375°F / Gas 4–5
The classic moderate range for most baking.
Roasting Vegetables
200–220°C / 400–425°F / Gas 6–7
Hot enough to caramelise edges and crisp the outside.
Bread & Pastry
220–230°C / 425–450°F / Gas 7–8
High heat for a strong rise and golden crust.
Pizza & Fast Roasting
240°C / 475°F / Gas 9
The hottest standard setting for very fast, intense cooking.
Note: Oven dials and conversion charts use rounded values, so a recipe temperature may differ by a few degrees from the exact mathematical conversion. Fan (convection) ovens typically run about 20°C (35°F) hotter than conventional ovens, so reduce the temperature or cooking time accordingly. Always use an oven thermometer for the most accurate results.
